Homemade Peanut Butter

A simple recipe for delicious and healthy homemade peanut butter. Free of oils, sugar, and salt, this is a peanut butter you can enjoy guilt-free.

Equipment

  • Scale
  • Food Processor/Blender
  • Bowl or Container

Ingredients
  

  • 125 g Dry Roasted Unsalted Peanuts* (1 Cup)

Instructions
 

  • Weigh the peanuts and make sure they are free from any shells or skin.
  • Add to your food processor or blender.
  • Blend and most of the peanut pieces will get stuck to the sides of the mixer.
  • Scrape the walls and blend again. Repeat this process over and over and eventually the peanuts will cream.
  • Blend until smooth.
  • If you desire a chunky version, add some peanuts at the end of the process. Bend until you reach the level of chunks you want.

*Depending on the size of your food processor, you will most likely require more than one cup of peanuts. See below for more information.

I want to say that homemade peanut butter is an easy adventure through the kitchen, but I just can’t. Honestly, it’s actually one of the more tricky ingredients that I’ve created over the last few years. The reason for this is because during the blending process it feels like you’re failing. The peanuts get chopped into small pieces and caked onto the wall of the food processor. Scraping the sides down seems to do little because as soon as the food processor starts spinning its blades, all the chucks get caked onto the walls almost immediately.

I cannot stress this enough; THIS IS A NORMAL PART OF MAKING PEANUT BUTTER!

Yes, it’s easy to lose faith that the peanuts are going to cream together, but it will happen. I’m guilty of giving up as well. The first time I tried to make peanut butter, I thought my food processor just couldn’t do it. You will most likely need to scrape down the sides of your food processor a dozen times or more, but suddenly it will just cream. It’s almost like alchemy when it happens.

In order to get the possible finished product, this is what you should do:

➣Get the right peanuts

Of course, starting the right nut is important, since it’s our one and only ingredient. Selecting a dry roasted, salt-free peanut is going to give the best result. Why? Because you can add anything to it to alter the taste (see below).

In case you’re wondering what dry roasted means, this is when a product is cooked without oil.

➣No oil needed

Yes, it’s true. This peanut butter doesn’t require any oil to come together. Since there’s no oil used, the final product will not need to be stirred before you use, since there is no oil that will separate from the peanuts.

➣The measurements are ONLY a reference

I gave the measurements of 125g (1 cup) just a reference point. Depending on the size of your food processor, you if need to adjust the amount of peanuts. I found that in my Vitamix blender, I could get away with doing 2 cups of nuts. Food processor are much wider, and will probably require something like 3 or 4 cups of nuts.

➣You WILL need a food processor

There is no way around this requirement. It will be impossible to cream the nuts with out a food processor or blender. I suppose it’s possible to do with a mortar, but I don’t think the amount of labor is worth it. Plus, I’m not really sure how creamy your end product will end up.

Prepare for a final product that is a bit different from what you buy in the supermarket. Even without salt and sugar, it’s a flavorful experience. Plus it’s really thick. A spoonful becomes a worthy and powerful opponent.

The best part of making homemade peanut butter from scratch is that it’s adjustable to your taste. If you want something sweeter, you can add some sugar. Not salty enough, start by adding a teaspoon of add salt. Do you want a chunky version, add some peanuts after it’s been creamed and give it one final blast with the food processor. You can even get creative and starting doing thing like marbling in chocolate.
